Lentil Salad for Lunch

Soooo after a looooong and very  stressful month I finally got the chance to wake up in the morning and have a Me moment. And you know what? This has been a difficult, shitty excuse the expression month for me, but this won’t stop me from expecting great things to happen and I ain’t gonna give up. I recently spent a lot of time working and  hadn’t been eating the best or exercising …at all…if I want to be honest here. This month included a lot of late night sandwiches and no proper meals.  I still feel exhausted and outta energy. However, today I decided to make myself a recovery meal,  a green, healthy and tasty salad. Wanna have some?

Ingredients:

  • One baby lettuce
  • half a green pepper
  • 2 cups lentils
  • 2 mozzarella balls
  • 2 medium potatoes
  • honey
  • olive oil
  • vinegar cream
  • sea salt
  • pepper

Instructions

  1. Boil the lentils and potaotes for about 15-20′ and then drain.
  2. Cut your veggies and mozzarella.
  3. Add some black pepper and sea salt.
  4. Top wth the olive oil and honey sauce, oh and don’t forget the  vinegar cream.
